Dump in a Bowl
2 C self-rising flour
1 stick of cold butter cut into 8 chunks
1 C sharp cheddar cheese grated
a pinch of red pepper
With your hands rub it all together until everything is crumble size.
That means Don’t stir or Mix
Make hole in the middle of the mixture and pour in
¾ C of cream – maybe more
(you can substitute milk if you’re on a diet but why bother?)
With a big spoon or your hand swoop around the bowl no more than 4-5 times
You should have a moist mixture (too moist for rolling out).
Dump it all on a generously floured surface.
Dust more flour on top so you can pat it out.
PAT down with hands to about ½ inch thick
Cut with small biscuit cutter no bigger than a fifty-cent piece
Place on greased or non-stick cookie sheet and
Bake in 450 oven for 10-15 min.
Watch bottoms so they don’t burn.
Serve Hot – My oh My
If they’re any left over (unlikely),
slice them for the next meal, add a smidgen of butter and
Toast under the broiler.
